I like to make my own cheese sauce for pasta and veggies (e.g. broccoli). It's so easy and quick but has a powerful calorie count, I'm sure.
(the following measurements are approximations)
1 Tablespoon butter
1/2 cup cheese, shredded (my favorite is jack/cheddar combo but regular cheddar is fine)
1/4 to 1/3 cup heavy cream (you can use milk) depending on how well the cheese melts and also how runny you want the sauce
1-melt butter in sauce pot
2-add shredded cheese and stir
3-once the cheese begins to melt, then add the cream and continue to stir
4-you'll need to stir for about 2 minutes or so until it melts into a sauce.
5-serve over veggies or add to pasta for "mac and cheese" style pasta
