You can find a good and quick recipe here. (I must state that I have not made this recipe yet but will try it very soon. Also, I think 1lb of spinach is a bit much even though the spinach will wilt and become "nothing". 1/2lb (8 oz) should be enough.)
We really like the recipe from The New Best Recipe cookbook (pg. 89).
